
Crispy Broccoli and Apple Salad

Ingredients
- Broccoli 10 oz
- Pickled Apples 1 piece
- Chopped almonds 0 oz
- Spanish onions 1 head
- Sweet Red Onion ½ head
- Garlic 1 clove
- Meyer Lemon Juice 2 tablespoons
- Almond 2 tablespoons
- Olive Oil 2 tablespoons
- Salt to taste
- Honey 1 teaspoon
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Divide the broccoli into florets and toss them into boiling salted water to taste for 30-45 seconds.
Step 2
Remove, shake off, and plunge into cold water for 5 minutes. Drain in a colander and set aside.
Step 3
Finely chop the white onion and sauté in olive oil until golden brown, then simmer until soft.
Step 4
Slice half of the red onion into thin rings.
Step 5
Chop the almonds with a knife or pulse in a blender until coarsely crushed.
Step 6
In a separate bowl, mix almond or olive oil (your choice), lemon juice, crushed garlic, and honey. Add 2 tablespoons of hot water and whisk until frothy. Taste and add salt and pepper to your liking.
Step 7
In a large bowl, combine the broccoli, apple cut into wedges, red onion, chopped almonds, and sautéed onion.
Step 8
Dress with the sauce and mix again.
