Creole Sweet Potato Salad
Ingredients
- Young Spinach "Belaya Dacha" 5 oz
- Avocado 2 pieces
- Spanish onions 5 oz
- Marinated cherries 10 oz
- Sweet Potato 30 oz
- Cilantro 0 oz
- Shelled pumpkin seeds 0 oz
- Lime 2 pieces
- Olive Oil 0 fl oz
- Honey 2 spoons
- Chili Flakes ½ spoons
- Salt to taste
Step-by-Step Guide
Step 1
Wrap the sweet potato in foil and bake in an oven preheated to 355°F for 40 minutes.
Step 2
Slice the onion into rings and cut the cherry tomatoes in half.
Step 3
Scoop the baked sweet potato out of its skin with a spoon and chop it with a knife. Roughly chop the cilantro.
Step 4
Peel the avocado and cut it into strips.
Step 5
For the dressing, squeeze the juice from the limes and mix it with olive oil, honey, chili flakes, and salt using a whisk.
Step 6
Combine all the ingredients and mix well. Let the salad sit for a while to allow the flavors to meld. Serve topped with toasted pumpkin seeds.
