Ingredients
- New Potatoes 0 lbs
- Onion 1 head
- Large eggs 6 pieces
- Celery stalk 2 pieces
- Orange Bell Peppers 1 piece
- Apple Cider Vinegar 2 tablespoons
- Sugar 1 teaspoon
- Dijon Mustard ½ cup
- Salt to taste
- Mayonnaise 5 oz
- Spices to taste
Step-by-Step Guide
Step 1
Cut the potatoes into small pieces and boil them in salted boiling water until tender. Drain and dry well.
Step 2
Boil the eggs hard in boiling water. Cool under ice-cold water, peel, and cut into small cubes.
Step 3
Meanwhile, in a large bowl, mix the vinegar, sugar, mustard, and mayonnaise. Add the diced green pepper, finely chopped celery, and onion.
Step 4
While the potatoes are warm, mix them with the salad so they absorb the dressing better.
Step 5
Add the eggs, gently mix, and season with salt. Refrigerate for 1 hour.
Step 6
Serve chilled, sprinkled with Cajun spices.
