Cranberry or Currant Kissel
Ingredients
- Dried cranberries with sugar 1 cup
- Sugar ¾ cup
- Potato protein 2 tablespoons

Step 1
Sort the berries, rinse them with hot water, and mash them well with a pestle or spoon. Add ½ cup of boiled cold water, strain through a sieve or squeeze through cheesecloth. Pour the berry pulp with 2 cups of water, place on the heat, and boil for 5 minutes, then strain.
Step 2
Add sugar to the strained broth, bring to a boil, pour in the diluted potato starch, and stir until it boils again.
Step 3
Pour the squeezed juice into the prepared kissel and mix well.
