Description
Kissel should be cooked in enameled cookware (without cracks in the enamel). Kissel can also be made from other fresh berries.

- Potato protein 2 teaspoons
- Sugar 3 tablespoons

Step-by-Step Guide
Step 1
Sort the berries, pour boiling water over them, and mash with a wooden spoon. Place the mashed berries in cheesecloth and squeeze out 1 teaspoon of juice (store the juice in a closed container in a cool dark place).
Step 2
Pour a glass of hot water over the pulp, place it on the stove, and bring to a boil, then strain through cheesecloth. Cool part of the strained broth (1/4 cup) and dissolve the potato starch in it, while bringing the remaining broth to a boil with sugar.
Step 3
When the kissel boils, pour in the diluted potato starch broth while stirring continuously, allow it to boil once, and immediately transfer it to a porcelain dish, continuing to stir to avoid froth (overcooked kissel becomes watery).
Step 4
When the kissel cools slightly, pour in the raw juice squeezed from the mashed berries.
