Crab Meat and Artichoke Salad

Ingredients

  • Artichoke bottoms 1 piece
  • Crab Meat 0 oz
  • Celery salt 0 oz
  • Orange Bell Peppers 2 pieces
  • Onion to taste
  • Mayonnaise 2 tablespoons
  • Cream 1 teaspoon
  • Ground Nutmeg a pinch
  • Salt to taste
  • Paprika to taste
  • Capers ½ teaspoon

Step-by-Step Guide

Step 1

Cut off the stem from the artichoke at the bottom. Remove the outer leaves and trim any tough leaves. Boil in salted water for 25-40 minutes until tender. The artichoke is ready when the outer leaves come off easily. Drain and dry well.

Step 2

Open the artichoke leaves to reveal the inner part like a flower. Remove the inner part with the white leaves and scrape gently with a spoon. Cool and cut into small pieces.

Step 3

In a bowl, mix the crab meat, artichoke, chopped celery, finely chopped green pepper, a few drops of onion juice, cream, and mayonnaise. Add nutmeg, salt, and paprika. Top with capers and serve.
