Couscous with vegetables and chicken fillet
Ingredients
- Couscous 5 oz
- Olive Oil 6 teaspoons
- Lemon 2 pieces
- Lime 1 piece
- Marinated cherries 5 oz
- Chicken fillet 5 oz
- Tomatoes 4 pieces
- Spanish onions 1 head
- Parsley 5 oz
- Fresh Mint 3 spoons
Step-by-Step Guide
Step 1
Soak the couscous in 300 ml of boiling water. Let it sit for 10 minutes, then fluff it with a fork. Drizzle with olive oil, and the juice of 2 lemons and 1 lime, stir well, and let it cool.
Step 2
Finely chop the cooked chicken, add quartered cherry tomatoes, diced "Ladyfinger" tomatoes, finely chopped red onion, and chopped parsley and mint. Combine with couscous and mix well.
