Couscous salad with seeds and herbs
Ingredients
- Couscous 10 oz
- Parsley 1 bunch
- Cilantro 1 bunch
- Lemon 1 piece
- Spanish onions 1 head
- Courgette ½ piece
- Toasted Sesame 0 oz
- Roasted Peanuts 0 oz
- Olive Oil 4 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour the couscous into a bowl and cover it with boiling water, using twice the volume of couscous. Cover with a lid and let it sit for 10 minutes.
Step 2
Fluff the couscous with a fork and add the chopped herbs, finely chopped red onion, grated lemon zest, and juice, peeled and seeded finely chopped cucumber, seeds, sesame, and olive oil. Season with salt and pepper. Mix everything well and let it sit for 30 minutes.
