Ingredients
- Couscous 5 oz
- Avocado 1 piece
- Lime 1 piece
- Olive Oil 3 tablespoons
- Fresh Mint 1 bunch
- Ground Cumin a pinch
- Pistachios 5 oz
- Salt a pinch
- Ground Black Pepper a pinch
Step-by-Step Guide
Step 1
Steam the couscous after soaking it for 5–10 minutes. Drizzle the cooked grain with olive oil, mix in the cumin, and season with salt.
Step 2
Grate the lime zest and squeeze out the juice. Cut the avocado flesh into small cubes, finely chop the mint (1–2 tablespoons), and mix it with the zest and citrus juice, then combine with the couscous.
Step 3
Serve the salad warm or cold, topped with pine nuts. Optionally, add 2 tablespoons of honey to taste.
