Compote of Fresh Apples or Pears
Ingredients
- Sugar ¾ cup
- Apple 20 oz
- Citrus Zest Mix to taste
- Orange zest to taste
- Cinnamon to taste
Step-by-Step Guide
Step 1
Peel the apples, cut each into 6–8 pieces, and remove the cores. To prevent the peeled apples from browning, place them in cold water slightly acidified with lemon juice until cooking.
Step 2
In a pot, add sugar, pour in 500 ml of hot water, add the sliced apples, and simmer for 10–15 minutes (depending on the apple variety) until the apples become soft.
Step 3
Add lemon zest, orange zest, or cinnamon to the finished compote. If the compote is made from ripe Antonovka apples, there is no need to boil them; just bring to a boil.
Step 4
The compote of fresh pears is prepared in the same way, but you can use less sugar (depending on the sweetness of the pears). Cook the compote for 10–15 minutes. If the pears are very ripe, just bring the compote to a boil. Cool the finished compote and pour it into bowls.
