Ingredients

  • Quinoa 1 cup
  • Water 2 cups
  • Salt to taste
  • Ground Black Pepper to taste
  • Green Beans 30 oz
  • Chopped Parsley 0 oz
  • Chopped dill 2 tablespoons
  • Lemon Juice 3 tablespoons
  • Wine Vinegar 1 tablespoon
  • Garlic 1 clove
  • Dijon Mustard 1 teaspoon
  • Extra virgin olive oil 2 tablespoons
  • Grapeseed Oil 2 tablespoons
  • Romaine lettuce 0 oz

Step-by-Step Guide

Step 1

Place the quinoa in a sieve and rinse under cold water. Transfer to a small pot, add water, and salt to taste. Bring to a boil, cover, and cook for 20 minutes until the water is absorbed.

Step 2

Drain the water, cover with a clean towel and lid, and let sit for 15 minutes. Transfer to a salad bowl, fluff with a fork, and let cool.

Step 3

Meanwhile, trim the beans. In a large pot, bring salted water to a boil. Blanch the trimmed beans for 5 minutes. Drain and transfer to a bowl of ice water. Once the beans are cool, gently peel off the skins. This should not take much time.

Step 4

Transfer the quinoa to a large bowl. Mix with the beans and herbs.

Step 5

In a small bowl, whisk together the lemon juice, vinegar, salt to taste, garlic, mustard, and oils. Mix with the quinoa and beans.

Step 6

Serve on a large plate and garnish with romaine leaves if desired.
