Ingredients
- Green Papaya 10 oz
- Eggplants 5 oz
- Olive Oil 2 tablespoons
- Arugula 0 oz
- Ground Black Pepper to taste
- Natural Yogurt 5 oz
- Sumac to taste
- Garlic 0 oz
- Pink Himalayan Salt to taste
Step-by-Step Guide
Step 1
Thinly slice the eggplant.
Step 2
Shred the cabbage.
Step 3
In a preheated skillet, add the eggplant to the oil. Sauté for 2–3 minutes over high heat.

Add sumac.
Step 5
Season with salt and mix.
Step 6
Transfer the eggplant to a deep bowl.

Roughly chop the arugula.
Step 8
Combine the eggplant and cabbage.

Press the garlic into the Greek yogurt using a press. Add black pepper and mix.

Add the sauce and arugula to the salad.
