Cold Chicken with Olives and Lemon

Ingredients

  • Roast chicken meat 15 oz
  • Olives stuffed with lemon 5 oz
  • Lemon 2 pieces
  • Whole egg 2 pieces
  • Olive Oil 5 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Fresh basil leaves to taste

Step-by-Step Guide

Step 1

Remove the pits from some olives — preferably of different colors — and chop them finely.

Step 2

In a deep bowl, whisk the egg yolks with a pinch of salt, then gradually add olive oil in a thin stream to create mayonnaise. Squeeze in a little lemon juice and fold in finely chopped olives, seasoning with salt and pepper to taste.

Step 3

Shred the chicken meat into strands, and mix it with the zest of 2 lemons, lemon wedges, the remaining olives, and mayonnaise. Season with salt and pepper. If you have any herbs, feel free to add them; basil works particularly well.
