Classic vinaigrette with onion

Ingredients

  • Beetroot 4 pieces
  • Salad Potatoes 3 pieces
  • Pickles 4 pieces
  • Green Peas 1 can
  • Turnips 3 pieces
  • Spanish onions 2 pieces
  • Olive Oil 5 fl oz
  • Champagne Vinegar 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Sauerkraut 5 oz

Step-by-Step Guide

Step 1

My secret for the vinaigrette! Wash the beetroot and wrap it in foil. Bake in the oven for 1.5 hours at 390°F.

Step 2

Boil the potatoes and carrots.

Step 3

Make the dressing. Mix the oil, salt, pepper, and vinegar.

Step 4

Chop the onion and soak it in a tablespoon of vinegar. Marinate for 10 minutes.

Step 5

In one bowl, chop the potatoes, carrots, peas, and onion. Dress this with 2/3 of the dressing.

Step 6

In a second bowl, combine the beetroot and the remaining dressing. Mix and let sit for 5–10 minutes.

Step 7

Chop the pickles and add them along with the sauerkraut to the beetroot.

Step 8

Mix everything together.
