Classic Caesar Salad with Chicken and Mustard Dressing
Ingredients
- Mixed salad greens ½ bunch
- Tomatoes 5 pieces
- White bread ½ piece
- Napa Cabbage ½ piece
- Garlic 2 cloves
- Chicken fillet 15 oz
- Olive Oil 5 fl oz
- Chocolate eggs 6 pieces
- Table Mustard 4 tablespoons
- Egg white 4 pieces
- Apple Cider Vinegar 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Anchovies 0 oz
Step-by-Step Guide
Step 1
Cut the chicken fillet into medium-sized pieces and fry. Tear the salad greens and napa cabbage by hand, and chop the tomatoes and eggs coarsely.
Step 2
Cut the white bread into large cubes (1.5x1.5 cm), place it in a dry skillet, and toast until crunchy over medium heat.
Step 3
Finely chop the garlic and sauté it in olive oil (3–4 tablespoons) until golden. Later, evenly drizzle this dressing over the croutons.
Step 4
Mustard dressing: Combine 4 egg yolks, 4 tablespoons of mustard, and 1 tablespoon of apple cider vinegar—season with salt and pepper, and whisk with a mixer until smooth; while continuing to whisk, gradually add olive oil (amount depending on desired consistency). Add the anchovies and whisk again.
