- Chicory 6 pieces
- Russian Cheese 5 oz
- Cooked Ham 5 oz
- Whole egg 2 pieces
- Mustard Greens 1 tablespoon
- Olive Oil 5 fl oz
- Balsamic Vinegar 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste

Step 1
Cut the chicory in half, and dice the cheese and ham into small cubes.
Step 2
In a deep bowl, whisk the egg yolks with mustard, then season with salt and pepper. Add balsamic vinegar and whisk again. Gradually drizzle in olive oil while continuing to whisk, until the mixture transforms into a thick, smooth sauce. Avoid pouring in the oil too quickly to prevent the sauce from separating.
Step 3
Place cubes of cheese and ham on the halved chicory, season with the sauce, and serve.
