Chicory Salad
Ingredients
- Chicory 6 pieces
- Salt to taste
- Olive Oil 3 tablespoons
- Champagne Vinegar 1 tablespoon

Step 1
Remove the stems from the chicory, separate the leaves, and cut them lengthwise. Rinse in cold water. Do not leave them in the water, or they will become bitter. Pat dry.
Step 2
Meanwhile, prepare the dressing: dissolve the salt in the vinegar, then add the oil and whisk well with a fork until all the ingredients are combined.
Step 3
Arrange the chicory on a plate and drizzle with the dressing. Serve immediately, or the leaves will wilt in the vinegar.
