Chickpea Tacos
Ingredients
- Soy Sauce 1 tablespoon
- Meyer Lemon Juice 2 spoons
- Mild Chili Spice 1 tablespoon
- Ground Cumin 1½ spoons
- Salt 1 tablespoon
- Ground Black Pepper 1 tablespoon
- Paprika ½ spoons
- Ground Dried Garlic ¼ spoons
- Dried onion powder ¼ spoons
- Cayenne Pepper to taste
- Dried Chamomile ¼ spoons
- Chickpea 15 oz
- Arugula 5 oz
- Tomatoes 1 piece
- Tortillas 8 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Line a baking sheet with parchment paper. Separate the chickpeas from the liquid and rinse them.
Step 2
Whisk together the soy sauce, lemon juice, salt, and spices, then add the chickpeas and mix well.
Step 3
Spread the mixture on a baking sheet in a single layer. Bake for twenty to forty minutes, until the chickpeas are crispy.
Step 4
Wrap the tortillas in a damp paper towel and heat them in the microwave for 30 seconds. Then, hang each tortilla on the rack of an oven preheated to 375°F, positioning two bars in the middle of the tortilla so that the edges hang down. Bake for 7-10 minutes until the tortillas become crispy.
Step 5
Place chickpeas in the taco shells, then top with arugula and diced tomatoes.
