Chickpea and Tomato Salad
Ingredients
- Chickpea 30 oz
- Tomatoes 30 oz
- Spanish onions 10 oz
- Large eggs 4 pieces
- Olive Oil 0.6 cups
- Salt 1 teaspoon
- Champagne Vinegar 6 tablespoons
- Ground Black Pepper to taste
- Chopped Sage Leaves to taste
Step-by-Step Guide
Step 1
Remove the seeds from the tomatoes and dice them. Peel the eggs and dice them. Finely chop the onion.
Step 2
In a bowl, combine the chickpeas, tomatoes, eggs, and onion.
Step 3
In another bowl, mix the olive oil, vinegar, salt, and pepper. Drizzle over the salad and toss.
Step 4
Serve, garnished with parsley.
