Chickpea and Red Onion Salad
Ingredients
- Spanish onions 0 oz
- Chickpea 20 oz
- Chopped Sage Leaves 0 oz
- Meyer Lemon Juice 2 tablespoons
- Olive Oil 1 tablespoon
- Capers 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Oak Leaf Lettuce to taste
Step-by-Step Guide
Step 1
In a bowl, add finely chopped red onion, cover with ice water, and let sit for 10 minutes. Drain and transfer to a salad bowl.
Step 2
Add chickpeas, parsley, lemon juice, olive oil, and finely chopped capers to the onion. Season with salt and pepper, and mix well.
Step 3
Serve on a bed of red leaf lettuce.
