Chicken Salad with Zucchini and Nuts
Ingredients
- Olive Oil 0.3 cups
- Meyer Lemon Juice ¼ cup
- Coarse Salt to taste
- Ground Black Pepper to taste
- Chicken fillet 20 oz
- Young zucchini 20 oz
- Fresh basil leaves 10 oz
- Spanish onions ½ head
- Chopped almonds 5 oz
- Chopped Sage Leaves 0 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
In a large bowl, mix 0.25 cups of olive oil and lemon juice. Season with salt and pepper. Add thinly sliced zucchini, stir, and set aside while the chicken cooks.
Step 2
In a large skillet, heat the remaining olive oil over medium heat. Season the chicken breasts with salt and pepper and fry for 7 minutes on each side until cooked through and golden brown. Transfer to a cutting board and slice thinly.
Step 3
Place the chicken in the bowl with the zucchini and add the spinach, thinly sliced onion, pecans, parmesan, and mint. Toss and serve.
