Chicken salad with roasted eggplant and soft cheese with cherry tomatoes

Ingredients

  • Eggplants 1 piece
  • Skin-On Chicken Breasts 2 pieces
  • Courgette 1 piece
  • Feta cheese 5 oz
  • Marinated cherries 10 oz
  • Olive Oil 5 tablespoons
  • Salt to taste
  • Soy Sauce to taste

Step-by-Step Guide

Step 1

Sauté the chicken fillet in a small amount of oil with the addition of soy sauce (1–2 tablespoons).

Step 2

Cut the eggplant into cubes, sprinkle with salt, drizzle with olive oil, and roast in an air fryer (or on a grill).

Step 3

Do the same with the zucchini.

Step 4

Cut the cheese into cubes and the cherry tomatoes in half.

Step 5

Arrange the chicken, vegetables, and top with soft cheese on a large plate. Drizzle everything with olive oil, gently mix to avoid damaging the structure of the cheese and vegetables. Serve immediately!
