Chicken Salad with Oranges and Feta Cheese
Ingredients
- Chicken fillet 3 pieces
- Young Spinach "Belaya Dacha" 2 cups
- Oranges 2 pieces
- Olive Oil 2½ teaspoons
- Apple Cider Vinegar ¼ cup
- Feta cheese 5 oz
- Minced garlic 1 clove
- Freshly squeezed orange juice 6 tablespoons
- Dijon Mustard 2 tablespoons
- Salt to taste
- Dried Rosemary 1 teaspoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the chicken fillet into cubes. In a large skillet, heat the olive oil. Add the chicken and sauté over medium heat for 2 minutes. Season with garlic and mint and cook for another 2 minutes. Then, reduce the heat and add the vinegar, orange juice, mustard, salt, and pepper. Simmer until cooked through.
Step 2
Wash and dry the spinach leaves with a towel. Divide the oranges into segments and cut them into cubes.
Step 3
In a separate deep bowl, combine the spinach, orange pieces, and the still warm chicken in the sauce, and gently mix.
Step 4
Divide the salad among 4 plates, sprinkling each serving with crumbled feta cheese.
