Chicken salad with nectarines and mint vinaigrette
Ingredients
- Mint Leaves 0 oz
- Sugar 0.3 cups
- Champagne Vinegar ¼ cup
- Salt ¼ teaspoon
- Meyer Lemon Juice 1 tablespoon
- Ground Black Pepper ¼ teaspoon
- Chicken fillet 2 pieces
- Roasted Peanuts 0.3 cups
- Cucumbers 4 pieces
- Nectarines 3 pieces
- Spanish onions 1 head
- Oak Leaf Lettuce 5 leaves
Step-by-Step Guide
Step 1
Preheat the grill or barbecue. Rub the chicken breasts with salt and pepper and place them on an oiled grill. Grill for about 4-5 minutes on each side until cooked through. Transfer to a plate and cool. Cut into small pieces.
Step 2
In a blender, blend the mint with sugar. Add vinegar, lemon juice, salt, and pepper. Blend again.
Step 3
In a bowl, combine the chicken, finely chopped cucumbers, chopped nuts, finely chopped onion, peeled and diced nectarines. Drizzle with the dressing and gently mix. Place 1 leaf of lettuce on each plate and fill each with the salad.
