Chicken Salad with Green Apple and Feta
Ingredients
- Pickled Chanterelles 4 pieces
- Skin-On Chicken Breasts 5 oz
- Green Apples 1 piece
- Fresh Mint 2 tablespoons
- Feta cheese 0 oz
- Chopped Sage Leaves ¼ cup
- Spinach 5 oz
- Applesauce 2 tablespoons
- Apple juice with pulp ¼ cup
- Apple Cider Vinegar 2 tablespoons
- Dijon Mustard 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Thyme 1 tablespoon
- Dried Rosemary 1 teaspoon
Step-by-Step Guide
Step 1
Boil the chicken breast. While it cools, prepare the dressing.
Step 2
Place all the dressing ingredients (applesauce, juice, vinegar, mustard, salt, pepper, thyme, rosemary) in a blender and blend until smooth.
Step 3
In a salad bowl, combine the chicken, mushrooms, feta, finely chopped mint, and parsley. Dress with the sauce and mix.
Step 4
Lay the spinach on the bottom of a plate, top with the prepared salad. Garnish with apple slices and serve. You can sprinkle chopped nuts on top.
