Chicken salad with gorgonzola, roasted pear, and walnuts
Ingredients
- Mixed salad greens 10 oz
- Chicken fillet 2 pieces
- Walnuts 2 cups
- Pears 2 pieces
- Scallions 6 pieces
- Goat cheese 5 oz
- Salt ½ teaspoon
- White Balsamic Cream ¼ cup
- Ground Black Pepper ½ teaspoon
- Olive Oil ¼ cup
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Heat 2 tablespoons of olive oil in a skillet over medium heat and sauté the chicken breasts until cooked through and golden brown. Let cool and cut into small pieces.
Step 2
Preheat the oven to 355°F. Cut the pears in half and remove the core. Slice the pears and place them on a baking sheet. Bake in the oven for 15 minutes until soft.
Step 3
Arrange the salad greens on 4 plates. Top with the pears, chicken, finely chopped green onions, and crumbled cheese. Sprinkle with walnuts.
Step 4
In a bowl, mix the vinegar, salt, pepper, and olive oil. Whisk lightly and drizzle over the salad. Serve immediately.
