Chicken Salad with Couscous and Olive Vinaigrette
Ingredients
- Couscous 1 cup
- Pitted olives ¼ cup
- Chopped Sage Leaves 2 tablespoons
- Capers 1 tablespoon
- Olive Oil 2 tablespoons
- Salt ¼ teaspoon
- Meyer Lemon Juice 1 tablespoon
- Ground Black Pepper ¼ teaspoon
- Garlic 1 clove
- Chicken fillet 2 pieces
Step-by-Step Guide
Step 1
Preheat the grill or barbecue. Season the chicken with salt and pepper and place it on the oiled grill. Grill for 4-5 minutes on each side until cooked through. Transfer to a plate and let cool. Cut into small pieces.
Step 2
Cook the couscous in boiling water until ready. Drain and rinse under cold water.
Step 3
In a large bowl, mix the finely chopped olives, parsley, finely chopped capers, olive oil, lemon juice, salt, pepper, and minced garlic. Mix well, add the couscous, and stir again. Before serving, add the chicken.
