Chicken Salad with Citrus without Mayonnaise
Ingredients
- Chicken fillet 15 oz
- Oranges 1 piece
- Grapefruits 2 pieces
- Tomatoes 15 oz
- Chinese green beans 10 oz
- Vegetable Oil 6 tablespoons
- Soy Sauce 5 fl oz
- Dijon Mustard 1 tablespoon
- Honey 1 tablespoon
- Garlic 2 cloves
- Salt to taste
- Ground Black Pepper to taste

Prepare all the ingredients.
Step 2
Cut the chicken fillet into medium cubes.
Step 3
Add minced garlic, salt, ground pepper, 50 ml of soy sauce, and 1 tablespoon of vegetable oil.
Step 4
Squeeze the juice from half an orange.
Step 5
Add the juice along with the pulp to the fillet, mix well. Let it marinate for at least 30 minutes, or you can leave it in the refrigerator overnight.
Step 6
Remove the marinated fillet from the marinade, discard the garlic and orange pulp, and dry it with a paper towel.
Step 7
Fry the fillet in a small amount of vegetable oil on both sides over medium-high heat, do not overcrowd the pan to ensure the fillet fries rather than stews.

Cut the green part of the Chinese cabbage into strips.

Cut the tomatoes into wedges.

Peel the grapefruit (if large, use one; if small, use 1.5) from the membranes, leaving only the pulp, and chop it roughly.

Prepare the dressing: mix 3 tablespoons of grapefruit juice, 3 tablespoons of soy sauce, 2 tablespoons of vegetable oil, 1 tablespoon of honey, 1 tablespoon of grainy mustard, salt, and pepper to taste.

Place the cabbage, tomatoes, grapefruit, and chicken on a plate, and drizzle with the dressing.

Mix and serve.
