Chicken Fillet and Grapefruit Salad
Ingredients
- Chicken fillet 20 oz
- Arugula 1 bunch
- Soy Sauce 1 tablespoon
- Orange juice concentrate 3 tablespoons
- Dijon Mustard ½ teaspoon
- Grapefruits 2 pieces
- Wheat Flour 4 tablespoons
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Wash the chicken fillet, dry it, and cut it lengthwise into 2 pieces. Season the fillet slices with salt and pepper on both sides. Dredge each piece of meat in flour. Fry in a well-heated skillet with vegetable oil until golden brown. Then transfer the chicken fillet to a baking dish and place in the oven for 10–15 minutes at 160–340°F. Remove and let cool.
Step 2
Peel the grapefruit, remove the seeds and membranes. Cut the flesh into large pieces.
Step 3
Wash the arugula and dry it well.
Step 4
Prepare the dressing by combining soy sauce, mustard, and orange juice.
Step 5
Slice the chicken fillet.
Step 6
Arrange the arugula, pieces of chicken fillet, and grapefruit on serving plates. Drizzle with the dressing.
