Ingredients

  • Salt a pinch
  • Olive Oil ⅓ cup
  • Green Butter 5 oz
  • Skin-On Chicken Breasts 10 oz
  • Merlot Grapes 10 oz
  • Walnuts ½ cup
  • Sweet Red Onion ½ piece
  • Feta cheese 0 oz
  • Dried Chamomile ½ teaspoon
  • Ground Black Pepper a pinch
  • Balsamic Vinegar 2½ tablespoons
  • Honey 1 tablespoon
  • Dijon Mustard 1½ teaspoons
  • Garlic 1 clove

Step-by-Step Guide

Step 1

Lightly pound the chicken fillet to an even thickness. Rub with salt, pepper, and dried thyme, then coat with olive oil.

Step 2

Heat a skillet and fry the fillet until cooked, about 4 minutes on each side. Transfer the fillet to a plate, cover with foil, and let it rest for 5 minutes. Then slice thinly.

Step 3

Cut the grapes in half and remove the seeds. Peel the onion and slice it into thin half-rings, rinse in cold water, and dry. Coarsely chop the walnuts.

Step 4

For the dressing, peel and mince the garlic clove, then mix with the other dressing ingredients (⅓ cup olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper) and whisk well.

Step 5

Place the salad mix, grapes, chicken fillet, and onion in a salad bowl, drizzle with the dressing, and toss. Sprinkle with crumbled feta cheese and walnuts, and serve.
