This salad is very filling.
Ingredients
- Chicken fillet 20 oz
- Dessert Yogurt ¼ cup
- Mayonnaise 2 tablespoons
- Meyer Lemon Juice ¼ cup
- Citrus Zest Mix 2 teaspoons
- Ground coriander 1½ teaspoons
- Salt ½ teaspoon
- Ground Black Pepper to taste
- Cayenne Pepper ¼ teaspoon
- Chopped Sage Leaves ¼ cup
- Grated Ginger Root 1 teaspoon
- Carrot 1 piece
- Scallions 1 piece
- Marinated cherries 20 oz
- Orange Bell Peppers 1 piece
Step-by-Step Guide
Step 1
Boil the chicken fillet and let it cool.
Step 2
Meanwhile, in a salad bowl, mix the yogurt, mayonnaise, lemon juice, lemon zest, coriander, salt, black pepper, and cayenne pepper.
Step 3
Chop the ginger and parsley. Add the mixture to the salad bowl.
Step 4
Chop the onion and carrot. Add them to the salad bowl.
Step 5
Slice the bell pepper into thin strips. Cut the cherry tomatoes in half. Add the pepper and tomatoes to the salad bowl.
Step 6
When the chicken cools, tear it into small pieces and add it to the vegetables in the bowl. Mix everything together.
