
Cherry Tomato Salad with Tarragon in Greek Style

Description
Fresh tarragon can be replaced with fresh mint or cilantro. I do not recommend substituting it with parsley, as it may overpower the other ingredients. Serve with pitas, meat, or as a salad.
Ingredients
- Tarragon 6 stems
- Marinated cherries 5 oz
- Kalamata olives 12 pieces
- Courgette 1 piece
- Olive Oil 2 tablespoons
- Dried Rosemary 1 teaspoon
- Dried Rosemary 1 teaspoon
- Salt to taste
- Lemon ½ piece
Step-by-Step Guide
Step 1
Cut the cherry tomatoes in half.
Step 2
Squeeze the juice from half a lemon.
Step 3
Peel the cucumber using a vegetable peeler, cut it in half lengthwise, and then into half-moons.
Step 4
Crush the olives with the side of a knife and remove the pit. Cut the olives in half.
Step 5
Tear the tarragon leaves from the stems.
Step 6
In a salad bowl, combine the tomatoes, cucumber, olives, tarragon, and dress with a mixture of olive oil and 1 tablespoon of lemon juice.
Step 7
Mix well and sprinkle with dried oregano and/or dried mint on top.
