Chanterelle Salad
Ingredients
- Pickled Chanterelles 5 oz
- 10% cream 0 fl oz
- Garlic 0 oz
- Romaine lettuce 0 oz
- Radicchio Salad 0 oz
- Cucumbers 5 oz
- Olive Oil 1 tablespoon
- Olive Oil 1 tablespoon
- Champagne Vinegar 1 teaspoon
- Salt to taste
- Chili Flakes to taste
- Nutmeg a pinch
Step-by-Step Guide
Step 1
Tear the washed chanterelles into small pieces by hand.
Step 2
Place them in the heated oil in the pan and season with salt.
Step 3
After 4 minutes, stir, reduce the heat, and pour in the cream. Add pepper.
Step 4
Arrange the greens on a plate.
Step 5
Dress with unrefined virgin oil.
Step 6
Finely chop the cucumber.
Step 7
Add it to the salad and drizzle with white wine vinegar.
Step 8
As soon as the cream begins to thicken, stir.
Step 9
Add mayonnaise.
Step 10
Press the garlic, season with nutmeg, and mix. Remove from heat after 1 minute.
Step 11
Dress the salad with the prepared chanterelles.
Step 12
Season with chili flakes and serve.
