  • Gingerbread-flavored syrup 0 fl oz
  • Celery salt 0 fl oz
  • Oyster Mushrooms 0 fl oz
  • Meyer Lemon Juice 5 fl oz
  • Vodka 0 fl oz
  • Freshly squeezed orange juice 0 fl oz
  • Salmon 5 oz

Step-by-Step Guide

Step 1

Prepare the marinade for the salmon: blend 100 grams of lemon juice, orange juice, 45 grams of syrup, 12 grams of salt, 5 grams of cilantro, and five drops of Tabasco using an immersion blender until the cilantro is completely ground.

Step 2

Smoke the marinade in a bottle using a smoking gun; if you don't have one on hand, you can skip this step. Cut the salmon into cubes and marinate for ten minutes.

Step 3

Blend the remaining ingredients, except for the vodka, and strain through a coarse sieve. Mix 120 ml of the mixture with vodka in a mixing glass filled with ice — strain.

Step 4

Serve the cocktail on a wooden stand in double-walled bowls under a glass dome. The cocktail is garnished with salmon marinated in a special orange-spiced smoked marinade, inspired by the Peruvian appetizer ceviche. Smoke from alder wood chips is infused under the glass dome, creating a striking presentation.
