Step-by-Step Guide

Step 1

To prepare celery with farro, pour three cups of water into a pot with farro, bring to a boil, and lightly salt. Reduce the heat and simmer until the farro is tender (45-60 minutes). Drain the water and let it cool slightly.

Step 2

Transfer the farro to a medium-sized bowl, add the celery, celery leaves, olives, raisins, and olive oil, then mix. Season to taste with salt, pepper, and lemon juice. Serve.
