  • Extra virgin olive oil ¼ cup
  • Red pepper flakes to taste

Step 1

To prepare celery with almonds and Parmesan, preheat the oven to 180°C (350°F). Spread the almonds on a baking sheet and roast, stirring occasionally, until golden brown (about 8-10 minutes). Let cool and chop coarsely.

Step 2

In a medium bowl, toss together the almonds, celery stalks and leaves, dates, and lemon juice. Season with salt and black pepper. Add the Parmesan and oil, gently mix, then season with red pepper flakes. Serve.
