Celery and Fennel Salad
Ingredients
- Celery stalk 5 oz
- Fennel 5 oz
- Spanish onions 5 oz
- Champagne Vinegar 0 fl oz
- Olive Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Slice the celery very thinly on the diagonal. A mandoline can be used.
Step 3
Slice the fennel into similarly thin slices, moving along the vegetable.
Step 4
Slice the white onion into thin feathers in the same manner.
Step 5
Transfer all the vegetables to ice water and let them sit for 15 minutes.
Step 6
If the celery has leaves, they can also be placed in the ice water and then added to the salad.
Step 7
Drain the vegetables in a colander and let them sit for another 5 minutes to allow the water to drain.
Step 8
For the dressing, whisk together the vinegar and olive oil, adding salt and pepper.
Step 9
Combine the vegetables with the dressing and mix well.
Step 10
This salad makes an excellent light side dish for fish dishes.
