Cauliflower, Olive, and Capers Salad with Sherry Vinaigrette
Ingredients
- Cauliflower 10 oz
- Scallions 2 pieces
- Celery stalk 1 bunch
- Orange Bell Peppers 1 piece
- Olives stuffed with lemon 12 pieces
- Courgette 1 piece
- Capers 1 tablespoon
- Chopped Sage Leaves ½ cup
- Champagne Vinegar 1½ tablespoons
- Chicken Egg 1 piece
- Olive Oil 6 tablespoons
- Dijon Mustard 1 teaspoon
Step-by-Step Guide
Step 1
Cut the cauliflower into several pieces and slice it very thinly. Place it in a bowl.
Step 2
Boil the egg hard, peel it, and separate the yolk from the white. In a small bowl, mix the yolk with minced garlic and a small amount of salt. Add the vinegar, mustard, and while whisking, incorporate the olive oil. Season with pepper and add salt to taste.
Step 3
To the bowl with cauliflower, add the finely chopped egg white, olives cut into quarters, capers, and parsley. Add the vinaigrette and mix well.
