Carrot Salad with Parsnip, Celery, and Daikon
Ingredients
- Salt 1 teaspoon
- Dijon Mustard 1 teaspoon
- Sugar 1 teaspoon
- Champagne Vinegar 0 fl oz
- Chopped Sage Leaves 10 fl oz
- Olive Oil 5 fl oz
- Parsnip 2 pieces
- Carrot 2 pieces
- Celery salt 1 piece
- Daikon ½ piece
Step-by-Step Guide
Step 1
Peel the carrots, small celery root, small parsnip, and daikon. Grate everything on a coarse grater and transfer to a bowl.
Step 2
In a blender, combine the mustard, salt, sugar, vinegar, and parsley. Blend until smooth. Then, while continuing to blend, add the olive oil.
Step 3
Dress the salad with the vinaigrette, mix well, cover with plastic wrap, and refrigerate for 20 minutes.
