Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Peel and wash the carrots. Cut off the ends and slice the carrots into large sticks. Since the carrots will be baked for this salad, keep in mind that the smaller the pieces you cut, the faster they will cook.

Line a baking sheet or dish where the carrots will be baked with a sheet of foil and brush the foil with olive oil.

Step 4

Place the carrot pieces on the baking sheet, sprinkle them with salt and pepper, and then put them in the preheated oven.

Step 5

Bake the carrots in the oven for about 45 minutes. Stir once after 20 minutes.

Step 6

While the carrots for the salad are baking, wash and dry the herbs, then chop them finely. Crumble the feta cheese with a fork.

Remove the carrots when they are soft and golden brown. Let them cool slightly.

Transfer the carrots to a salad bowl, sprinkle with crumbled cheese and finely chopped parsley.

Serve the carrot salad with cheese warm.
