During the Soviet era, this recipe was affectionately known as 'Little Freckles' or 'Squirrel' (isn't that cute?), and it was prepared just when those ever-present unexpected guests arrived. Carrot salad with cheese is the simplest dish you can whip up in such situations, ensuring you don’t come off as an unwelcoming host. If you have more time, you can also present it beautifully, for example, in halved hard-boiled eggs, tart shells, or on slices of tomatoes.
Ingredients
- Carrot 2 pieces
- Garlic 1 clove
- Russian Cheese 5 oz
- Mayonnaise 0 oz
- Parsley 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the carrot and grate it using a coarse grater.

Grate the cheese using a large grater.

Finely chop the parsley leaves.

Mix the carrot, cheese, and parsley.
