Carrot, Mint, Pistachio, and Feta Salad
Ingredients
- Olive Oil 2 tablespoons
- Carrots 20 oz
- Canned chickpeas 15 oz
- Ground Cumin 2 teaspoons
- Lemon Juice 1 tablespoon
- Clear Honey 1 tablespoon
- Mint 1 bunch
- Spinach 5 oz
- Pistachios 5 oz
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 180°C.
Step 2
Combine 1 tablespoon of oil, carrots, chickpeas, and cumin on a baking sheet, season with salt, and mix well.
Step 3
Bake for 30 minutes or until the carrots are tender.
Step 4
Mix together lemon juice, honey, and the remaining oil, then drizzle over the carrots and chickpeas. Let it sit until cooled.
Step 5
Toss together the mint, spinach leaves, and pistachios. Crumble the feta and drizzle with a little more oil.
