Carrot and Wheat Sprout Salad

Ingredients

  • Peanut Sprouts 10 oz
  • Parsley 1 bunch
  • Fresh Mint 1 bunch
  • Courgette 1 piece
  • Cilantro 1 bunch
  • Lemon 1 piece
  • Olive Oil 5 fl oz
  • Turnips 2 pieces
  • Orange zest 1 piece
  • Cracked Wheat ½ cup
  • Salt to taste
  • Ground Black Pepper to taste
  • Sunflower Seeds 0 oz

Step-by-Step Guide

Step 1

Boil the cracked wheat in salted water, then drain the water.

Step 2

Peel the cucumber and cut it into cubes. Chop the herbs.

Step 3

Mix the cucumber, herbs, lemon juice, and olive oil, season with salt and pepper, add the wheat, mix again, and transfer to a deep transparent square salad bowl.

Step 4

Combine the grated carrots and seeds, pour in the orange juice, season, and place in the salad bowl.

Step 5

Top with the sprouts and garnish with mint.
