Instead of capercaillie, you can use veal.
Ingredients
- Goat cheese 0 oz
- Semi-soft cream cheese 0 oz
- Mixed salad greens 0 oz
- Capercaillie Meat 5 oz
- Raspberry gin 0 oz
- Cognac 0 oz
- Worcestershire Sauce 0 fl oz
- Thyme 0 oz
- Lingonberry to taste
- Pickled Apples 0 oz
Step-by-Step Guide
Step 1
To marinate the capercaillie fillet, cut it into small pieces (1 cm), add garlic, thyme, bay leaf, and olive oil. Leave for 1–2 hours.
Step 2
On a plate, place the cream cheese, topped with the mixed salad greens dressed with raspberry vinaigrette.
Step 3
Season the capercaillie fillet with salt and pepper. Place it on a hot skillet with olive oil. Fry for 1–2 minutes.
Step 4
Flambé with cognac, immediately add butter and Worcestershire sauce.
Step 5
Mix all the ingredients.
Step 6
Remove the skillet from the heat, add pickled apples, lingonberries, and goat beard. Mix well.
Step 7
Transfer everything onto the plate on top of the salad.
