The Caesar salad is a true hit, and although it appeared in our country only 20-25 years ago, it has already become a classic. And, of course, it has inspired numerous culinary variations. For instance, with shrimp. To prepare Caesar salad with shrimp, follow the classic recipe: mix lettuce leaves, croutons, and Parmesan cheese, then add a homemade dressing made from Worcestershire sauce, egg yolk with mustard, olive oil, lemon juice, and, of course, anchovies. Quickly sauté the shrimp in a pan to achieve a crispy crust.
Ingredients
- White bread ½ pieces
- Whole egg 1 piece
- Garlic 3 cloves
- Anchovies 4 pieces
- Worcestershire Sauce 1 tablespoon
- Olive Oil 5 fl oz
- Dijon Mustard 1 tablespoon
- Meyer Lemon Juice 0 fl oz
- Grated Pecorino Pepato Cheese 0 oz
- Shrimp 20 oz
- Romaine lettuce 1 head
- Butter 0 oz
- Vegetable Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the bread into large cubes, removing the crusts.
Step 2
Transfer the bread to a baking sheet, drizzle with olive oil, sprinkle with salt, and place in the oven preheated to 390°F for 8–10 minutes.
Step 3
Whisk the egg yolk with mustard and a pinch of salt in a deep bowl.
Step 4
Continue whisking and gradually pour in 150 ml of olive oil in a thin stream. The mixture should become smooth and homogenous.
Step 5
Add crushed garlic, chopped anchovies, 1 tablespoon of lemon juice, Worcestershire sauce, and black pepper to the sauce. Mix well.
Step 6
Peel the fresh shrimp.
Step 7
In a skillet, heat vegetable and butter, add a clove of garlic, and sauté the shrimp for 2–3 minutes. Season with salt and pepper, and finish with a splash of lemon juice.
Step 8
Tear the romaine leaves into large pieces and remove the thick veins.
Step 9
Transfer the lettuce leaves to a bowl with the dressing and toss to combine.
Step 10
Place the salad on a serving plate, then top it with the shrimp and croutons. Grate Parmesan cheese on top.
