Caesar Salad with Potatoes and Sweet Peas
Ingredients
- Baby Potatoes 25 oz
- Green Peas 10 oz
- Radish 1 bunch
- Red Onion ½ head
- Olive Oil 0 fl oz
- Freshly squeezed lemon juice 0 fl oz
- Dijon Mustard 0 fl oz
- Minced garlic 1 clove
- Grated Parmesan cheese 0 oz
Step-by-Step Guide
Step 1
To prepare the Caesar salad with potatoes and sweet peas, steam the potatoes for 10 minutes (or until tender). Add the peas and cook for one more minute.
Step 2
Transfer the vegetables to a large bowl. Let them cool slightly. Add the radish and onion.
Step 3
In a small bowl, mix the oil, lemon juice, mustard, and garlic. Pour in the Parmesan and stir.
Step 4
Season with salt and plenty of pepper. Add the dressing to the potatoes and mix thoroughly. Optionally, add more salt and pepper to taste.
Step 5
Serve warm or cool to room temperature.
