Caesar Salad with Chicken and Anchovies
Ingredients
- Skin-On Chicken Breasts 4 pieces
- Green Butter 1 bunch
- Egg white 6 pieces
- White bread 4 slices
- Sour Cream 5 oz
- Olive Oil 5 fl oz
- Garlic 1 clove
- Anchovies 0 oz
- TABASCO® to taste
- Tarragon 4 pieces
- Grated Pecorino Pepato Cheese 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Whip the sour cream, tarragon, minced garlic, most of the anchovies, and Parmesan cheese with a mixer, adding a few drops of TABASCO.
Step 2
Boil the eggs hard.
Step 3
Tear the lettuce leaves into small pieces, place them in a bowl, cover, and refrigerate for a while.
Step 4
Cut the chicken meat into strips, season with salt and pepper. Fry in olive oil until golden brown.
Step 5
Cut the bread into small cubes and fry in olive oil until golden brown in the pan where the chicken was cooked.
Step 6
Add the hot chicken and croutons to the bowl with the lettuce leaves, and dress with the sauce.
Step 7
Cut the eggs into quarters, add to the salad, place the remaining anchovies and Parmesan, and mix well.
