Caesar Salad with Basil

Ingredients

  • Olive Oil 5 fl oz
  • French Baguette 1 piece
  • Garlic 1 clove
  • Chicken Egg 1 piece
  • Meyer Lemon Juice 0 fl oz
  • Anchovy fillet 0 oz
  • Fresh basil leaves 10 fl oz
  • Parsley 0 oz
  • Romaine lettuce 15 oz
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 375°F.

Step 2

Break the baguette into small pieces and place on a baking sheet. Drizzle with 30 ml of olive oil and sprinkle with 1/4 teaspoon of salt and pepper. Toss and bake until golden brown for 12-15 minutes.

Step 3

Meanwhile, in a blender, chop the garlic. Add the egg, lemon juice, anchovy paste, and 1/2 teaspoon of pepper. Blend well. While blending, add the remaining 90 ml of oil, then the finely chopped herbs. Mix everything well.

Step 4

In a large bowl, combine the salad leaves with the dressing, crispy croutons, and half of the cheese. Top with the remaining cheese and serve.
