Caesar Salad with Anchovy Mayonnaise
Ingredients
- Romaine lettuce 1½ heads
- Olive Oil 10 fl oz
- French Baguette 16 pieces
- Bacon 6 pieces
- Whole egg 1 piece
- Garlic 1 clove
- Anchovy fillet 4 pieces
- Meyer Lemon Juice 1 tablespoon
- Worcestershire Sauce to taste
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Tear the lettuce leaves into pieces and place them in a large bowl. Preheat the grill.
Step 2
Brush the thin slices of baguette with oil on both sides and grill until golden brown. Let cool.
Step 3
Fry the chopped bacon in a pan over medium heat until crispy. Add to the salad.
Step 4
In a blender, combine the egg yolk, minced garlic, and anchovy fillets, and blend for 1 minute. While blending, gradually add the remaining oil. The sauce should resemble mayonnaise. Add lemon juice and Worcestershire sauce. Mix well, and season with salt and pepper.
Step 5
Use a vegetable peeler to shave the Parmesan cheese.
Step 6
Drizzle the dressing over the salad, add the Parmesan, and mix well. Divide the salad into 4 bowls and top with pieces of the toasted baguette.
