Cabbage Salad with Prunes and Walnuts
Ingredients
- White Cabbage ½ piece
- Carrot 1 piece
- Pitted Wild Apricots 5 oz
- Shelled pumpkin seeds 5 oz
- Lime 1 piece
- Mayonnaise 2 tablespoons
Step-by-Step Guide
Step 1
Wash the prunes and soak them in warm water for 10 minutes. Remove the tough outer leaves from the cabbage, cut it in half, and remove the core. Thinly shred the leaves. Peel the carrot and grate it on a coarse grater.
Step 2
Mix the cabbage with the carrot, drizzle with lime juice, add salt, and thoroughly massage the mixture.
Step 3
Drain the prunes, chop them into small pieces. Chop the walnuts into coarse crumbs. Add the prunes, walnuts, and lime zest to the cabbage. Mix and refrigerate for 20 minutes. Before serving, dress with mayonnaise.
